Chocolate chip Zucchini Bread

Our new favorite thing to do with zucchini! We love the nutty crunch and sweetness of this bread, plus it's a sneaky way to get those veggies in! It's great for breakfast or even dessert.

INGREDIENTS:

-       1 cup of zucchini, grated

-      1/3 cup canola oil

-       1/2 cup plain greek yogurt, at room temperature

-       1 large egg, at room temperature

-       1/2 cup agave syrup

-       1 1/2 teaspoon vanilla extract

-       1 1/2 cups all purpose flour

-       1/2 teaspoon baking soda

-      1/2 teaspoon baking powder

-       1/2 teaspoon salt

-       1 teaspoon ground cinnamon

-       1/2 cup pecans, toasted and chopped

-       3/4 small chocolate chips (we love Enjoy Life)

DIRECTIONS:

Preheat the oven to 350 degrees. Whisk oil, yogurt, egg, agave and vanilla in small bowl.  In a separate, larger bowl, whisk flour, baking soda, baking powder, salt and cinnamon. Add wet ingredients to dry ingredients and mix well. Fold in zucchini, nuts and chocolate chips. Pour into a greased loaf pan and bake for for 45 minutes.

Caprese Salad
Caprese Salad

One of our favorite ways to use FARM fresh tomatoes and basil is in this caprese salad. It takes no time at all to throw together and it makes for a great side to nearly any meal.

INGREDIENTS: 

-       1 ½ cups of chopped mozzarella cheese

-       3 medium tomatoes, chopped

-       6 basil leaves, chopped

-       Balsamic vinegar, salt and pepper, to taste

DIRECTIONS:

Combine cheese, tomatoes and basil. Drizzle with balsamic and crack fresh pepper and salt.

NOTE: This dish is great when prepared ahead of time or as leftovers, just be sure to cover it while it’s being refrigerated, otherwise the cheese has a tendency to dry out.

Avocado / Tomato Salad
Avocado / Tomato Salad

This salad is so easy, it comes together in as long as it takes to cut everything up. It's a go-to for us when we are low on time, and in need of a healthy side item. It also makes a great entree when you top it with grilled chicken!

INGREDIENTS:

 - 1 FARM Avocado - cubed

 - 2 Tomatoes - cubed

 - 1 head of lettuce (we love romaine)

 - Italian Dressing (we love Bernstein’s)

 

DIRECTIONS:

Chop lettuce and top with tomatoes and avocados. Toss with dressing. Enjoy!

 

FARM Guacamole

Classic Guacamole

This is FARM original recipe is a guarantee hit for game day, or any day. 

INGREDIENTS

- 1-2 FARM avocados - mashed

- 1/4 - 1/2 cup FARM salsa

- 4-6 slices of pickled jalapeño

- 1 clove of garlic

- Salt (to taste)

- Juice of 1/2 lime - about 1 tablespoon

DIRECTIONS:

Mince jalapeño and garlic together. Combine all ingredients and mash to desired consistency. Enjoy with tortilla chips.
